Rotisserie Chicken


Don't you just love a rotisserie chicken!
This chicken was sooo good! Lemon, Dijon and Herb (yes, from my herb garden) Roast Chicken.
First I brined the chicken -- easy, just 8 cups water and 1 cup kosher salt for 3 hours.
Then I made a marinade of garlic, fresh rosemary, fresh thyme, lemon zest, Dijon mustard, and balsamic vinegar. I let the chicken marinade for 3 more hours. Then put it in the rotisserie for 1 hour and 15 minutes. The house smelled so good -- and the chicken was so tender and moist!
Sometimes the simple things are the BEST!

Happy Earth Day


This year I am trying to grow my Better Boy tomatoes in a EarthBox.
The EarthBox is a new and simple way to garden. With these two plants I should yield 50 pounds of tomatoes!! That means great BLT's, salsa, salads, and gazpacho!!

Herb Planter











I've been busy planting my herbs! I've got chives, 4 types of basil, 4 or 5 different types of sage, parsley, cilantro, rosemary, and thyme. I'm still trying to find tarragon. I think it will be fun having them right outside my kitchen door this year. The rabbits will have to find another source of food this year :)

Decorating Eggs




This year I was inspired by "MS" to decoupage my eggs. They turned out real cute, and were so easy to make. I blew out the eggs, and then decorated them with butterflies from a paper napkin and then covered them with Mod Podge. They are on a bed of edible grass - yum!

The Flowering Dogwood




The flowering dogwood is native to the eastern half of the United States. It is a most handsome tree, with scarlet berries in the fall and green flower clusters in the spring. The tiny flowerhead is surrounded by four white or pink petal-like leaves.


Legend states that its timber was used for the cross in Christ's crucifixion and its blossom is shaped in the form of a cross.
