Rotisserie Chicken


Don't you just love a rotisserie chicken!
This chicken was sooo good! Lemon, Dijon and Herb (yes, from my herb garden) Roast Chicken.
First I brined the chicken -- easy, just 8 cups water and 1 cup kosher salt for 3 hours.
Then I made a marinade of garlic, fresh rosemary, fresh thyme, lemon zest, Dijon mustard, and balsamic vinegar. I let the chicken marinade for 3 more hours. Then put it in the rotisserie for 1 hour and 15 minutes. The house smelled so good -- and the chicken was so tender and moist!
Sometimes the simple things are the BEST!

  2. I wanted to come by and say Welcome. I looked at some of your back post. I have a planter just like your and grow herbs in it. I think your dinner looked great also. Well, don't be a stranger.
