Breakfast for Dinner

I love breakfast food, but usually don't have the time or gumption to make it in the morning. I think it makes a great dinner!! Tonight I made savory waffles with poached eggs & bacon. These waffles were sooo good. Here's the recipe for the waffles....


Savory Waffles

4 eggs, separated
2 cups milk
2/3 cup unsalted butter, melted
1 cup grated Parmigiano-Reggiano cheese
1/3 cup minced fresh flat leaf parsley
2 1/2 Tbs. minced fresh chives
1/2 tsp. minced fresh rosemary
2 1/3 cups all-purpose flour
2 tsp. baking powder
1 1/4 ts. salt

Preheat waffle maker on medium-high heat.

In a large bowl, whisk together egg yolks, milk, butter, cheese, parsley, chives and rosemary. Over sheet of waxed paper, sift together flour, baking powder and salt. Add flour mixture to yolk mixture, whisk until smooth.

In another bowl, whisk egg whites until stiff peaks form. Using rubber spatula, fold one-third of whites into batter, then carefully fold in remaining whites.

Pour batter into waffle maker. Close lid, cook until waffles are golden brown and crisp.

Serve waffles warm with poached eggs and bacon.

Serves 4-6 (I am freezing leftover waffles)

  2. Funny thing...despite years of cooking, I've never made a savory waffle. I'll have to remedy that. Your recipe sounds delicious.

  4. I would have never thought of the rosemary, cheese, parsley and chives; but, now that you serve it with eggs and bacon, it all sounds so yummy and comforting! The kids love a breakfast dinner!   5. What a different recipe. We often do breakfast for dinner when we are not real hungry on a Sunday night in the winter. This would be a good recipe for me to take to my cooking light club to share when they do a breakfast theme. It certainly would be thinking outside the box which I like to do. Thanks for sharing and I will visit again.
