Pineapple Granita is great when you are looking for something to cool you off! We are having 90 plus days in North Carolina!! This is a simple version of granita. I used pineapple juice, but you can you any juice you have. Freeze your juice in an ice cube tray, I used silicone, but any will work. When solid pulse 3 to 5 cubes in a food processor (don't add too many) until shards form. Serve in a pretty glass and enjoy :)
