Foodie Friday - Cafe Green Salad

This week I am posting a salad from the newest food network star, Melissa d'Arabian. I was glad when she won, she was my pick! She reminds me a lot of Sara Moulton, and I have followed her for many years on the Food Network. I hope we will be seeing a lot of Melissa! Her first two shows have been great. This recipe is from her first show. The vinaigrette taste so good, fresh and will make you think why do I buy that bottled dressing when this is so easy to make, and the taste is not comparable!!




Cafe Green Salad

Ingredients

Mustard Vinaigrette:

  • 1 garlic clove, sliced in 1/2
  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • Small splash soy sauce
  • Salt and freshly ground black pepper
  • 3 tablespoons olive oil

Directions

3 cups mixed greens, the darker the better (not iceberg)

Rub the inside of a large wooden bowl with the garlic clove and then either discard it or save it for another use. Put the mustard in the bowl and whisk in the balsamic vinegar and soy sauce (a French secret!) vigorously for about 10 seconds to get a creamy consistency. Season with salt and pepper, to taste. Drizzle in the olive oil as slowly as possible with 1 hand while whisking as quickly as possible with the other hand to emulsify. Lay the salad greens on top of the dressing and toss just before serving.

Simple and delicious!!

  1. I just love a salad like that. This sounds really good. I missed Melissa's show, must be on when I am at work. I liked her too! I posted yesterday, thought it was Thursday. Oh well.....how time flies. Talke to you real soon:)

  5. This dressing certainly looks like it will be good. And you're right.....botttled dressings just can't hold a candle to the homemade ones! Thanks....I'll be trying this one!

  6. Interesting, I like how she rubs the wooden bowl with the garlic. I've made a mustard vinaigrette before, but now I'll have to try it with the French secret you shared with us today. Soy sauce? Who knew?

  7. What a lovely dressing. I was unable to keep up with FNTV this summer, so I didn't know she had one. The one program I watched led me to believe she was up against fierce competitors. Thanks for sharing the recipe with us. I hope you are having a wonderful day.

  9. This looks really good! Love the salad days of Summer - but I was at the vegetable stand today and noticed that they appeared to be slightly down in produce from last week-end. I guess some things are beginning to peter out. Thanks for your visit today!
