- 2 cups raw pecan halves
Warm Spice Mix
- 2 tablespoons granulated sugar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground allspice
Rum Glaze
- 1 tablespoon rum, preferably dark
- 2 teaspoons vanilla extract
- 1 teaspoon light or dark brown sugar
- 1 tablespoon unsalted butter
Heat oven to 350 degrees. Line rimmed cookie sheet with parchment paper and spread pecans in even layer; toast 4 minutes, rotate pan, and continue to toast until fragrant and color deepens slightly, about 4 minutes longer. Transfer cookie sheet with nuts to wire rack.
For the Spice Mix
While nuts are toasting, stir together sugar, salt, cinnamon, cloves, and allspice in medium bowl; set aside.
For the Glaze
Bring rum, vanilla, brown sugar, and butter to a boil in medium saucepan over medium-high heat, whisking constantly. Stir in toasted pecans and cook, stirring constantly with wooden spoon, until nuts are shiny and almost all liquid has evaporated, about 1 1/2 minutes.
Transfer glazed pecans to bowl with spice mix; toss well to coat. Return glazed and spiced pecans to parchment-lined cookie sheet to cool.

ReplyDeleteHi Haden, Great recipe! I have all the ingredients and I am going to make these tomorrow morning. I am having a cookie exchange on Sunday afternoon and I am putting together a cheese board- wouldn't these be excellent with cheese and grapes?
ReplyDeleteThank you for helping me with my menu!

I have never made spiced nuts. This is the year, these look too good to pass up! The flavors are sound wonderful to me! YUM! Thank you for sharing.
ReplyDeleteI love these nuts and usually have some in the freezer -- like touse them in salads instead of of croutons!
ReplyDeleteI, too, make pomanders -- they make the house smell heavenly and to me, that scent is part of Christmas season!
The rum glaze sounds exquisite! I make savory pecan nibbles, and the rum glazed will be such a nice compliment! Thanks so much for the recipe.
ReplyDeleteHaden, this is a wonderful recipe - particularly for the holidays. I love the idea of using the spiced nuts as a hostess gifts. Have a wonderful Foodie Friday,
ReplyDeleteOh, I need to make some of these for my darling friend who always sends me 5# of fresh pecans from the farm for the holidays. Perfect!
ReplyDeleteI think they'll go great with the Candy Cane Martinis I posted today, we must have been on the same wavelength. Thanks!
These are not on my list to make. I LOVE nuts and spiced nuts are even better :)
ReplyDeleteBlessings!
Gail
This looks and sounds very nice. Could you do this with other nuts since pecans are very expensive in Belgium?
ReplyDeleteThey look wonderful! I try so hard to make spiced nuts every year and somehow I burn them every time. This recipe makes me want to try again.
