Peaches Wrapped in Prosciutto

This is a EASY salad to make during the week when you want to add a gourmet touch to your meal! This recipe came from a Donna Hay cookbook. If you are not familiar with Donna Hay she is from Australia. I love her style -- her recipes usually have a handful of ingredients and she turns them into a tasty gourmet treat!

Balsamic vinegar and brown sugar boiling until thickened.

Peaches Wrapped in Prosciutto
Serves 4

Ingredients
2 peaches
6 slices prosciutto, halved
Arugula
1/2 cup balsamic vinegar
1/4 cup brown sugar
cracked black pepper

Cut each peach into six wedges and wrap in the prosciutto. Place on serving plates with the arugula. Place the vinegar and sugar into a non-stick frying pan over high heat and boil until thickened. Cool slightly, spoon over the peaches, sprinkle the pepper and serve.

  1. Now I've had prosciutto-wrapped cantaloupe, but peaches sound even better and they are sooooo good right now. And that sauce sounds like the perfect touch!

  5. OOOOOOOOOHhhhh, AAAAAAAhhhh! This is a real keeper, Kendra! We have peach trees and they peaches look fabulous this year. I will certainly make this simple but elegant side dish. Anything on a bed of arugula would be lucious!

  13. now I have done cantaloupe in prosciutto but never thought of peaches, I love it!!! I don't really like cantaloupe but I love Peaches!
