This could possibly be one of the tastiest roast chickens I have ever made! And talk about easy---Les Paresseux are lazy people, but we all need a "lazy" kind of recipe now and then! All you are doing is adding fresh herbs - I used rosemary, thyme, and oregano 1/2 inside the bird, the other half outside. The chicken is roasted in a Dutch oven for 45 minutes at 450. Add vegetables, I used potatoes, carrots and shallots, Bake for another 45 minutes. That's it!
O my gosh...it was a treat! Think of the best crouton you ever had and that is what this was like!

What a deliciously different way to cook chicken. I can one of those Paresseux on many occasions. I'll have to find that recipe in the cookbook and try it soon!

ReplyDeleteI know what I'm doing this weekend! Exercising my Le Creuset for this roast chicken recipe. Well done! BTW, love the crouton... Had you not shown it I would have assumed the bread would turn to mush under the chicken.
