The Perfect Spring Meal

I visited my local strawberry field today....love getting fresh strawberries, they really do taste different!!
I wanted to make a special dish with them, I haven't had too much time lately to do much cooking, so I was really in the "mood" to use my knife skills and fire up the grill!! 

This was a great meal...and screams Spring to me!

Salmon with Strawberry Salsa

Salmon with Strawberry Salsa

Ingredients:
2 cups fresh strawberries, diced
1 cup cherry tomatoes, quartered
4 scallions, white and green portions, sliced thin
1 tsp. fresh parsley, minced
1 Tbsp. balsamic vinegar
1 tsp. fesh lemon juice
Drizzle of olive oil
Drizzle of honey
Salt and Pepper to taste

Salmon fillets (about 6 oz. each)
Freshly squeezed lemon juice
Salt and Pepper to taste

Salsa Directions:
Combine the strawberries, tomatoes, scallions, parsley, vinegar, lemon juice, olive oil, honey, and salt and pepper to taste in a bowl.  Mix well to blend, then cover and refrigerate while you prepare the salmon.

Heat the grill to high.  Make a foil baking dish.  Place the salmon fillets on the foil.  Squeeze a bit of fresh lemon juice over each fillet, and season with salt and pepper.  Grill for about 10 minutes, checking for doneness.  Transfer the salmon to serving plates and top with strawberry salsa.

  1. Looks wonderful! That Strawberry Salsa looks great.....I bet it would be good with a grilled chicken breast as well. I love your foil pan for the grill....easy clean up:)

  3. I am not a big fan of salmon, but I know I should eat it more often. THIS recipe just might tempt me to try it....I love any kind of fruit salsa on fish. This one sounds especially good. Thanks for sharing.

  4. Kendra, This looks delicious. I am so sorry that I never got to visit your shop when I was visiting the kids in Cary. We walked by it in the evening when we had dinner in Apex. It is beautiful, but I can understand the need to get away from the retail world.

  5. Kendra, I make salsas all of the time, but I've never made one with strawberries. This I have to try. Now if only the price of salmon would drop a little. In the last year I can't get over the price increases and I don't know why. Salmon is one of my all time favorites.
