Spring Green Risotto was chosen by Kimberly from Indulge & Enjoy as this weeks assignment with the Barefoot Bloggers! This risotto is outstanding!! I must admit this was my first attempt at making risotto, I think I always thought it was too time consuming. I actually enjoyed the whole process. I was lucky enough to still have some of my homemade chicken stock (Ina's recipe) that I made this past winter, so I am sure that added to all the wonderful flavors in this dish. My DH said this is definitely a REPEAT!!

ReplyDeleteI loved the risotto too. As to what to do with the leftover mascarpone, put it under the breast skin of Cornish hens. I just posted the recipe.

ReplyDeleteThe mascarpone can be used a lot like cream cheese. I would use it as a creamy spread on toast with some strawberries. or for a frosting. or maybe mix some roasted garlic and herbs for a spread. or make tiramisu. mmmm so many uses for mascarpone.

Mascarpone- flavor it with lemon juice and lemon rind and mix with powered sugar. Yummy lemon icing, filling. Make muffins or cupcakes and put a dollop in the batter when you put it in the muffin tins and bake. Muffins with a great filling. Yummy!
