I loved how easy this dish was! I only cooked one cornish hen for the two of us; half of a cornish hen is the perfect serving size for us.
The backbone of the cornish hen was removed and then the hen was flattened with the heel of your hand. Next a teaspoon of tapenade was spread under the skin. Rub the hen with olive oil, lemon juice and then season with salt and pepper. That's it.... Bake at 500 for 25 minutes.
