Chicken Divan

This was a new recipe for Chicken Divan for me. We loved it!! I have made Chicken Divan for years, it's a great dish because it can be made in hurry but looks like you have been cooking all day.


Preheat oven to 350. Spray a 13X9 inch baking dish with nonstick cooking spray. Place broccolini around edge of baking dish; set aside.

Sprinkle Chicken breasts evenly with salt and pepper.

In a large skillet, melt butter over medium-high heat; add chicken, and cook for 3 to 4 minute per side, or until lightly browned.

Remove chicken from skillet, and place over broccolini, leaving as much butter in pan as possible.

Add flour to butter, and cook for 2 minutes, stirring constantly. Stir in broth, sherry, and cream; cook for 4 to 5 minutes, stirring constantly, until thickened. Spoon sauce over chicken. Sprinkle with cheese and almonds.

Cover, and bake for 20 minutes. Uncover, and bake for 5 minutes longer. Serve immediately.
Chicken Divan / Makes 4 to 6 servings

2 bunches broccolini, trimmed
1 1/2 pounds boneless skinless chicken breasts, pounded to 1/4 inch thickness
1/2 teaspoon salt
1/2 teaspoon ground black pepper
6 tablespoons butter
4 tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
1/4 cup dry sherry
1/4 cup heavy whipping cream
2 tablespoons shredded Parmesan cheese
2 tablespoons sliced almonds

  4. Kendra, Boy! Does this sound good. I love anything that calls for Sherry. I like to use cream sherry in a recipe like this too. I see that you used broccolini. I have never used it. I heard that it is bitter. Was it? I would love to make this for company. Yummy post!
